Scale
- 1 pound ground beef
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- 1 teaspoon salt, divided
- 1/2 teaspoon black pepper, divided
- 3/4 cup plain yogurt
- 1 tablespoon lemon juice
- 4 rounds pita bread
- 2 cups romaine lettuce, shredded
- 2 medium tomatoes, diced
- 1 medium cucumber, diced
- 1/4 medium red onion, thinly sliced
- 2 tablespoons fresh parsley, chopped
Instructions
- Heat a large skillet over medium heat. If warming the pita in the oven, preheat the oven to 300°F.
- In a small bowl, stir together the plain yogurt, lemon juice, half of the minced garlic, 1/4 teaspoon of the salt, and 1/4 teaspoon of the black pepper. Set aside.
- Add the olive oil to the skillet. Add the remaining garlic and cook for about 30 seconds until fragrant.
- Add the ground beef, cumin, paprika, oregano, remaining salt, and remaining black pepper. Cook, breaking up the meat, until browned and cooked through, about 8 to 10 minutes.
- Continue cooking for 1 to 2 minutes more so any extra moisture cooks off and the seasoning settles into the beef.
- Warm the pita bread until soft. Fill each pita with shredded lettuce, seasoned beef, diced tomatoes, diced cucumber, and sliced red onion.
- Spoon over the yogurt sauce, sprinkle with chopped parsley, and serve immediately.
Notes
- Warm the pita before serving so it stays soft and flexible.
- Drain excess grease from the beef if needed for a lighter filling.
- Chop the vegetables close to serving time for the freshest texture.
- Add an extra squeeze of lemon to the sauce if you want a brighter finish.
