Description

Warm pita stuffed with seasoned ground beef, crisp vegetables, and a creamy lemon yogurt sauce makes this Mediterranean-inspired meal fresh, hearty, and easy enough for any night of the week.


Ingredients

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt, divided
  • 1/2 teaspoon black pepper, divided
  • 3/4 cup plain yogurt
  • 1 tablespoon lemon juice
  • 4 rounds pita bread
  • 2 cups romaine lettuce, shredded
  • 2 medium tomatoes, diced
  • 1 medium cucumber, diced
  • 1/4 medium red onion, thinly sliced
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat a large skillet over medium heat. If warming the pita in the oven, preheat the oven to 300°F.
  2. In a small bowl, stir together the plain yogurt, lemon juice, half of the minced garlic, 1/4 teaspoon of the salt, and 1/4 teaspoon of the black pepper. Set aside.
  3. Add the olive oil to the skillet. Add the remaining garlic and cook for about 30 seconds until fragrant.
  4. Add the ground beef, cumin, paprika, oregano, remaining salt, and remaining black pepper. Cook, breaking up the meat, until browned and cooked through, about 8 to 10 minutes.
  5. Continue cooking for 1 to 2 minutes more so any extra moisture cooks off and the seasoning settles into the beef.
  6. Warm the pita bread until soft. Fill each pita with shredded lettuce, seasoned beef, diced tomatoes, diced cucumber, and sliced red onion.
  7. Spoon over the yogurt sauce, sprinkle with chopped parsley, and serve immediately.

Notes

  • Warm the pita before serving so it stays soft and flexible.
  • Drain excess grease from the beef if needed for a lighter filling.
  • Chop the vegetables close to serving time for the freshest texture.
  • Add an extra squeeze of lemon to the sauce if you want a brighter finish.
