For the Meatballs:

  • 1 lb ground beef or turkey
  • 1/4 cup breadcrumbs (or gluten-free breadcrumbs)
  • 1/4 cup grated Parmesan cheese (optional)
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste

For the Potatoes:

 
  • 2 lbs baby potatoes or Yukon gold potatoes, quartered
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp dried parsley
  • Salt and pepper, to taste

Instructions

  • Preheat oven to 400°F (200°C).
  • In a mixing bowl, combine ground meat, breadcrumbs, Parmesan (if using), egg, garlic, onion powder, Italian seasoning, salt, and pepper. Mix well and shape into meatballs.
  • In another bowl, toss the potatoes with olive oil, garlic powder, paprika, parsley, salt, and pepper.
  • Spread the seasoned potatoes on a baking sheet and place the meatballs on the other side.
  • Bake for 20-25 minutes, flipping the potatoes and meatballs halfway through for even cooking.

 

  • Serve hot, garnished with fresh parsley, extra Parmesan, or a dollop of sour cream if desired.

Notes

  • For extra crispiness, broil for 2-3 minutes at the end of baking.
  • Swap ground beef for turkey for a leaner option.

 

  • Add roasted veggies like bell peppers or carrots for extra nutrients.
