Ingredients

Units Scale

Fries

  • Frozen French Fries – quantity as per package instructions (about 4 cups)

Steak and Vegetables

  • 1/2 lb sliced ribeye or sirloin steak, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 medium onion, thinly sliced
  • 1 tablespoon butter
  • 1 tablespoon oil (vegetable or olive oil)
  • 2 cloves garlic, minced
  • Salt, to taste
  • Black pepper, to taste
  • Optional smoked paprika, 1/2 teaspoon

Cheese Sauce

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup milk (whole or 2%)
  • 1 cup shredded cheddar or American cheese blend

Instructions

  1. Prepare the Fries: Bake or fry the frozen French fries according to the package instructions until golden and crispy. For extra crunch, spread them on a baking sheet and bake at 425°F (220°C) for a few additional minutes.
  2. Sauté the Vegetables: In a skillet over medium heat, heat 1 tablespoon butter and 1 tablespoon oil. Add the sliced onions and green bell peppers, cooking for 5 to 7 minutes until softened and lightly caramelized.
  3. Cook the Steak: Push the vegetables to the side of the skillet and add the thinly sliced steak. Season with minced garlic, salt, pepper, and smoked paprika if using. Cook for 3 to 5 minutes until the steak is browned and tender, then mix with the vegetables.
  4. Make the Cheese Sauce: In a small saucepan, melt 2 tablespoons butter over medium heat. Whisk in 2 tablespoons flour to form a roux. Gradually add 1 cup milk, whisking continuously until the mixture thickens. Stir in 1 cup shredded cheese until melted and smooth. Keep warm over low heat.
  5. Assemble the Loaded Fries: Arrange the cooked fries on a large serving platter or individual bowls. Spoon the steak and vegetable mixture generously over the fries, then drizzle the warm cheese sauce on top. Serve immediately for the best ooey-gooey experience.

Notes

  • Use fresh, high-quality steak and vegetables for the best flavor and texture.
  • Cook steak in batches if necessary to avoid overcrowding and ensure proper browning.
  • Keep the cheese sauce warm over low heat to maintain a smooth and pourable consistency.
  • Double frying or baking the fries gives extra crispiness that holds up well under toppings.
  • Season the steak and vegetables generously to balance the overall flavor.
