  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp red pepper flakes (optional)
  • 1/2 lb (225g) pasta (penne, fettuccine, or your choice)
  • 1/4 cup fresh basil or parsley, chopped

Instructions

  • Cook pasta according to package instructions. Drain and set aside.
  • Season chicken with salt, pepper, and Italian seasoning. Heat olive oil in a skillet over medium heat and cook chicken for 4-5 minutes per side until golden and fully cooked. Remove and slice.
  • In the same skillet, melt butter and sautรฉ garlic until fragrant, about 1 minute.
  • Add sun-dried tomatoes and chicken broth, scraping the pan to deglaze. Let simmer for 2 minutes.
  • Stir in heavy cream, Parmesan cheese, and red pepper flakes. Simmer until the sauce thickens.
  • Add the cooked pasta and sliced chicken, tossing to coat in the sauce.
  • Garnish with fresh basil or parsley and serve immediately.
