For the marinated beef:

  • 1 lb flank steak or sirloin, thinly sliced
  • 3 tbsp soy sauce (or tamari for gluten-free)
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp cumin
  • Salt and pepper, to taste

For the roasted veggies:

  • 2 large carrots, sliced
  • 1 zucchini, chopped
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 red onion, sliced
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 1 tsp dried thyme
  • 1 tsp paprika

Instructions

  • Marinate the beef:
    In a medium bowl, whisk together the soy sauce, olive oil, balsamic vinegar, honey, garlic, oregano, cumin, salt, and pepper. Add the thinly sliced beef to the marinade and toss to coat. Cover and refrigerate for at least 30 minutes, or up to 4 hours for maximum flavor.
  • Prepare the vegetables:
    Preheat the oven to 400ยฐF (200ยฐC). Line a baking sheet with parchment paper.
    In a large bowl, toss the chopped carrots, zucchini, bell peppers, and onion with olive oil, salt, pepper, thyme, and paprika. Spread the veggies in a single layer on the prepared baking sheet.
  • Roast the veggies:
    Roast the vegetables in the preheated oven for 25-30 minutes, or until they are tender and slightly browned, stirring halfway through.
  • Cook the beef:
    While the vegetables roast, heat a large skillet over medium-high heat. Add the marinated beef and cook for 4-5 minutes, or until browned and cooked through, stirring occasionally.
  • Assemble the dish:
    Once the vegetables are roasted, serve the marinated beef on top of the roasted veggies. Garnish with fresh herbs or a squeeze of lemon juice, if desired.
