- 4 tbsp butter
- 3 tbsp maple syrup
- 2 tbsp grainy mustard
- 1 tbsp Dijon mustard
- 1 tsp lemon juice
- 1/2 tsp kosher salt
- 1/4 tsp pepper
- 2 lb carrots
Instructions
- Preheat oven to 400°F (200°C).
- Peel and cut carrots into evenly sized pieces.
- In a small saucepan, melt butter and stir in maple syrup, grainy mustard, Dijon mustard, lemon juice, salt, and pepper.
- Place carrots on a baking sheet and drizzle the maple mustard mixture over them, tossing to coat evenly.
- Roast in the preheated oven for 25-30 minutes, tossing halfway through, until carrots are tender and caramelized.
- Serve warm as a delicious side dish.
Notes
- For added flavor, sprinkle fresh thyme or rosemary over the carrots before roasting.
- Carrots can be cut into sticks, rounds, or diagonals depending on preference.
