Description

Sweet and tangy Maple Mustard Roasted Carrots that are buttery, perfectly caramelized, and full of flavor—a simple yet elegant side dish.


Ingredients

  • 4 tbsp butter
  • 3 tbsp maple syrup
  • 2 tbsp grainy mustard
  • 1 tbsp Dijon mustard
  • 1 tsp lemon juice
  • 1/2 tsp kosher salt
  • 1/4 tsp pepper
  • 2 lb carrots

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Peel and cut carrots into evenly sized pieces.
  3. In a small saucepan, melt butter and stir in maple syrup, grainy mustard, Dijon mustard, lemon juice, salt, and pepper.
  4. Place carrots on a baking sheet and drizzle the maple mustard mixture over them, tossing to coat evenly.
  5. Roast in the preheated oven for 25-30 minutes, tossing halfway through, until carrots are tender and caramelized.
  6. Serve warm as a delicious side dish.
