- 4 large croissants
- 4 large eggs
- 1/2 cup milk (or non-dairy milk)
- Salt and pepper, to taste
- 1 tbsp butter (or olive oil for dairy-free)
- 1 cup cooked turkey sausage patties (or plant-based sausage)
- 1 cup shredded cheddar cheese (optional)
- Maple Mustard Sauce:
- 1/4 cup maple syrup
- 2 tbsp Dijon mustard
- 1 tbsp apple cider vinegar
- 1 tsp garlic powder
- 1/2 tsp ground black pepper
- 1/2 tsp salt
Instructions
- Preheat the oven to 350ยฐF (175ยฐC). Slice croissants in half and set aside.
- In a bowl, whisk together eggs, milk, salt, and pepper.
- In a skillet over medium heat, melt butter (or heat oil), then add the egg mixture. Cook, stirring gently, until scrambled and just set. Remove from heat.
- To make the maple mustard sauce, whisk together maple syrup, Dijon mustard, apple cider vinegar, garlic powder, black pepper, and salt in a small bowl.
- On each croissant bottom, layer turkey sausage, scrambled eggs, shredded cheddar cheese (if using), and a drizzle of maple mustard sauce.
- Top with the other half of the croissant and place on a baking sheet. Warm in the oven for 5โ7 minutes until the cheese is melted and the croissants are heated through.
- Serve warm, with extra sauce on the side if desired.
Notes
- For a dairy-free version, use plant-based milk, vegan butter or olive oil, and dairy-free cheese or omit cheese entirely.
- You can make the sauce ahead of time and store it in the fridge for up to 5 days.
