Instructions

  • Make the Pomegranate Beer Jam:

    • In a small saucepan, combine pomegranate arils, beer, sugar, lemon juice, and lemon zest.
    • Bring to a simmer over medium heat. Reduce to low and cook until thickened, about 15 minutes.
    • The jam should be sticky and the pomegranate seeds softened. Set aside.
  • Prepare the Fritters:

    • Fill a heavy-bottomed pot (like a Dutch oven) halfway with safflower oil. Heat to 350ยฐF.
    • In a bowl, whisk together flour, baking powder, and salt. Fold in Manchego cheese.
    • In another bowl, beat the eggs and whisk in milk. Pour wet ingredients into dry and mix until combined.
  • Fry the Fritters:

    • Using a small ice cream scoop or two spoons, drop batter into the hot oil.
    • Fry for about 5 minutes, flipping halfway, until golden and cooked through.
    • Adjust heat as needed to maintain 350ยฐF.
    • Transfer fritters to paper towels and immediately sprinkle with salt.
  • Serve:

    • Serve warm with the pomegranate beer jam on the side or spooned over the fritters.
