- In a small saucepan, combine pomegranate arils, beer, sugar, lemon juice, and lemon zest.
- Bring to a simmer over medium heat. Reduce to low and cook until thickened, about 15 minutes.
- The jam should be sticky and the pomegranate seeds softened. Set aside.

- Fill a heavy-bottomed pot (like a Dutch oven) halfway with safflower oil. Heat to 350ยฐF.
- In a bowl, whisk together flour, baking powder, and salt. Fold in Manchego cheese.
- In another bowl, beat the eggs and whisk in milk. Pour wet ingredients into dry and mix until combined.

- Using a small ice cream scoop or two spoons, drop batter into the hot oil.
- Fry for about 5 minutes, flipping halfway, until golden and cooked through.
