Description

This Magic Lemon Cobbler is a sweet, tangy dessert that’s perfect for lemon lovers! With a buttery, golden crust and a lemony filling that magically appears as it bakes, this treat is a delightful finish to any meal.


Ingredients

  • 1/2 cup (1 stick) unsalted butter
  • 1 cup all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup granulated sugar
  • 1 cup buttermilk
  • 1 tablespoon vanilla extract
  • 1 tablespoon lemon extract
  • 21 oz can lemon pie filling

Instructions

  • Preheat your oven to 350°F (175°C).
  • Place the butter in a 9×9-inch baking dish and melt it in the oven for about 3-4 minutes. Remove and set aside.
  • In a bowl, mix together the flour, baking powder, and salt. Add the sugar and mix again.
  • Stir in the buttermilk, vanilla extract, and lemon extract until just combined.
  • Pour the batter over the melted butter in the baking dish. Do not stir.
  • Drop dollops of the lemon pie filling over the top.
  • Bake for 45-55 minutes until the edges are golden.
  • Let the cobbler cool slightly before serving and enjoy its magic!
