- 1/2 cup (1 stick) unsalted butter
- 1 cup all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup granulated sugar
- 1 cup buttermilk
- 1 tablespoon vanilla extract
- 1 tablespoon lemon extract
- 21 oz can lemon pie filling
Instructions
- Preheat your oven to 350°F (175°C).
- Place the butter in a 9×9-inch baking dish and melt it in the oven for about 3-4 minutes. Remove and set aside.
- In a bowl, mix together the flour, baking powder, and salt. Add the sugar and mix again.
- Stir in the buttermilk, vanilla extract, and lemon extract until just combined.
- Pour the batter over the melted butter in the baking dish. Do not stir.
- Drop dollops of the lemon pie filling over the top.
- Bake for 45-55 minutes until the edges are golden.
- Let the cobbler cool slightly before serving and enjoy its magic!
