  • 1 can (14 oz) diced tomatoes, no sugar added
  • 1 tsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1/4 tsp red pepper flakes (optional for spice)
  • 1 tbsp lemon juice
  • Fresh parsley, chopped (for garnish)

Instructions

  • Sauté the Aromatics:
    • Heat olive oil in a large pot over medium heat.
    • Add onion, garlic, carrot, and celery. Sauté for 3-4 minutes until softened.
  • Cook the Soup:
    • Stir in shredded cabbage, diced tomatoes, chicken broth, salt, pepper, paprika, oregano, thyme, and red pepper flakes.
    • Bring to a boil, then reduce heat and let it simmer for 25-30 minutes until the cabbage is tender.
