Description

These loaded sweet potatoes are stuffed with spiced ground beef and drizzled with a sweet and spicy hot honey sauce. Topped with creamy cottage cheese and fresh avocado, they make a hearty and flavorful meal.


Ingredients

  • 4 medium sweet potatoes
  • Olive or avocado oil, for rubbing
  • Salt and pepper, to taste
  • Butter, for serving
  • 1 pound ground beef
  • 1 tablespoon olive or avocado oil
  • 1 teaspoon minced garlic
  • 1/2 teaspoon onion powder
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 tablespoon Worcestershire sauce
  • 1 teaspoon cornstarch
  • 1/4 cup beef broth
  • 1/4 cup hot honey
  • 1 tablespoon sriracha
  • 1/2 to 1 teaspoon red pepper flakes, to taste
  • 1/2 tablespoon vinegar (white or apple cider)
  • Cottage cheese, as needed
  • 1 avocado, thinly sliced or mashed

Instructions

  1. Preheat oven to 400°F (200°C). Rub sweet potatoes with olive or avocado oil and season with salt and pepper.
  2. Bake sweet potatoes directly on a baking sheet for 45–60 minutes, until tender.
  3. Meanwhile, heat oil in a skillet over medium heat. Add garlic and cook 30 seconds until fragrant.
  4. Add ground beef, onion powder, chili powder, paprika, salt, and black pepper. Cook until beef is browned.
  5. Stir in Worcestershire sauce. Mix cornstarch with beef broth and add to the skillet. Cook until the mixture thickens slightly.
  6. For hot honey, combine honey, sriracha, red pepper flakes, and vinegar in a small bowl. Adjust spiciness to taste.
  7. Once sweet potatoes are baked, slice them open and fluff the insides with a fork. Add butter if desired.
  8. Top each sweet potato with spiced beef, a drizzle of hot honey, cottage cheese, and sliced or mashed avocado.
  9. Serve immediately.
