- 4 medium sweet potatoes
- Olive or avocado oil, for rubbing

- 1 pound ground beef
- 1 tablespoon olive or avocado oil
- 1 teaspoon minced garlic
- 1/2 teaspoon onion powder
- 1 teaspoon chili powder
- 1 teaspoon paprika
- 3/4 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 tablespoon Worcestershire sauce
- 1 teaspoon cornstarch
- 1/4 cup beef broth
- 1/4 cup hot honey
- 1 tablespoon sriracha
- 1/2 to 1 teaspoon red pepper flakes, to taste
- 1/2 tablespoon vinegar (white or apple cider)
- Cottage cheese, as needed
- 1 avocado, thinly sliced or mashed
Instructions
- Preheat oven to 400°F (200°C). Rub sweet potatoes with olive or avocado oil and season with salt and pepper.
- Bake sweet potatoes directly on a baking sheet for 45–60 minutes, until tender.
- Meanwhile, heat oil in a skillet over medium heat. Add garlic and cook 30 seconds until fragrant.
- Add ground beef, onion powder, chili powder, paprika, salt, and black pepper. Cook until beef is browned.
- Stir in Worcestershire sauce. Mix cornstarch with beef broth and add to the skillet. Cook until the mixture thickens slightly.
- For hot honey, combine honey, sriracha, red pepper flakes, and vinegar in a small bowl. Adjust spiciness to taste.
- Once sweet potatoes are baked, slice them open and fluff the insides with a fork. Add butter if desired.
- Top each sweet potato with spiced beef, a drizzle of hot honey, cottage cheese, and sliced or mashed avocado.
- Serve immediately.
