  • 4 tablespoons avocado oil, divided

  • 2/3 cup Parmesan, grated

  • 2 wedges lemon, juice of

  • 1 teaspoon freshly cracked black pepper

Instructions

  1. Preheat oven to 425°F (220°C). Rub potatoes with olive oil and sea salt, then place on a baking sheet. Bake for 45–60 minutes, until skins are crispy and potatoes are tender inside.
  2. While potatoes bake, cut steak into bite-sized cubes. Season with kosher salt, pepper, and 1 tablespoon avocado oil. Set aside.
  3. Heat a skillet over medium-high heat with 2 tablespoons avocado oil. Sear steak bites in batches until browned and cooked to your liking. Remove and set aside.
  4. In the same skillet, melt butter. Add minced garlic, Cajun seasoning, and red pepper flakes, stirring until fragrant. Return steak bites to the pan, tossing to coat in the garlic Cajun butter sauce. Finish with lemon juice.
  5. In a small saucepan, heat heavy cream over medium heat. Stir in Parmesan until melted and smooth, creating a creamy topping sauce.
  6. Slice baked potatoes open and fluff the insides with a fork. Drizzle with Parmesan cream sauce, then top with steak bites.
