Description

This Lemony Mushroom Mascarpone Toast is a rich and flavorful appetizer or light meal featuring crusty sourdough topped with creamy mascarpone, pan-roasted mushrooms, caramelized shallots, and buttery beans. Ingredients

  • 8 slices sourdough (or other crusty bread), 3/4โ€ thick
  • 1/4 cup olive oil, plus more as needed
  • 1 lb mixed mushrooms, trimmed
  • 1 shallot, thinly sliced
  • 1 (15 oz) can butter beans, rinsed and drained
  • 1/4 cup balsamic vinegar
  • 1 lemon, half zested and juiced
  • 1/4 tsp crushed red pepper
  • 1 tbsp chopped fresh dill
  • 1 tbsp minced fresh chives
  • 1 (8 oz) tub mascarpone cheese
  • Freshly cracked black pepper, to taste
  • Flaky sea salt (optional)

Instructions

  • Toast the Bread:

    • Heat a 12โ€ skillet over medium-high heat. Add a drizzle of olive oil.
    • Work in batches to toast the bread for 1-2 minutes per side, until golden and crisp. Transfer to a serving plate.
  • Sautรฉ the Mushrooms:

    • Add the ยผ cup olive oil to the skillet. Once hot, add the mushrooms.
    • Cook for about 4 minutes, stirring occasionally, until browned and tender.
  • Caramelize the Shallots & Simmer:

    • Add the shallot and a pinch of salt. Cook for another 3-4 minutes, stirring often, until caramelized.
    • Stir in the butter beans and balsamic vinegar. Reduce the heat to low and let simmer for about 5 minutes, allowing the vinegar to reduce.
  • Add Flavor & Assemble:

    • Stir in the lemon zest, lemon juice, crushed red pepper, dill, and chives. Season with salt to taste.
    • Spread a generous amount of mascarpone onto each slice of toast.
    • Mound the mushroom mixture on top.
  • Garnish & Serve:

    • Sprinkle with freshly cracked black pepper and flaky sea salt (if using).
    • Garnish with extra fresh herbs and a drizzle of olive oil. Serve immediately.
