Instructions
- Season chicken breasts with salt and pepper on both sides.
- Heat olive oil in a large skillet over medium-high heat.

- In the same skillet, add shallots and sauté for 3-4 minutes until softened and slightly caramelized.

- Cook sauce for 4-5 minutes, reducing slightly.
- Whisk in butter until sauce is smooth and glossy.
- Return chicken breasts to the skillet and spoon sauce over them. Cook for another 2 minutes to warm through.
- Garnish with chopped fresh parsley and serve immediately.
