Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 large shallots, thinly sliced
  • 3 garlic cloves, minced
  • 1/2 cup chicken broth
  • 1/3 cup fresh lemon juice (about 2 lemons)
  • 1 teaspoon lemon zest
  • 2 tablespoons unsalted butter
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season chicken breasts with salt and pepper on both sides.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add chicken breasts and cook 5-6 minutes per side until golden brown and cooked through. Remove chicken and set aside.
  4. In the same skillet, add shallots and sauté for 3-4 minutes until softened and slightly caramelized.
  5. Add minced garlic and cook for 30 seconds until fragrant.
  6. Pour in chicken broth, lemon juice, and add lemon zest. Stir to combine and bring to a simmer.
  7. Cook sauce for 4-5 minutes, reducing slightly.
  8. Whisk in butter until sauce is smooth and glossy.
  9. Return chicken breasts to the skillet and spoon sauce over them. Cook for another 2 minutes to warm through.
  10. Garnish with chopped fresh parsley and serve immediately.
