Description

Ingredients

  • 1 pinch fine salt

  1. Set out 6 small glasses or ramekins on a tray.
  2. Add the heavy cream, granulated sugar, and fine salt to a small saucepan. Stir over medium heat until the sugar dissolves and the mixture reaches a gentle simmer.
  3. Let the mixture simmer gently for 3 minutes, stirring occasionally. Remove from the heat.
  4. Stir in the fresh lemon juice and lemon zest until fully combined.
  5. For a smoother texture, strain the mixture through a fine-mesh strainer into a pouring jug.
  6. Pour evenly into the prepared glasses or ramekins.
  7. Let sit at room temperature for 15 minutes, then refrigerate for at least 4 hours, or until set.
  8. Top with fresh berries, if using, and serve chilled.
