Muffins

  • 2 1/2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1/4 teaspoon baking soda
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3 tablespoons poppy seeds
  • 1 1/4 cups Lemon Lifeway Kefir, room temperature
  • 1/2 cup milk, room temperature
  • 1/2 cup canola oil
  • 1 large egg, room temperature
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons freshly squeezed lemon juice
  • Zest of 1 lemon

Glaze

  • 1/2 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons heavy cream

Instructions

  • Preheat the oven to 400ยฐF. Line a muffin tin with paper liners and set aside.
  • In a medium bowl, whisk together the flour, sugar, baking soda, baking powder, salt, and poppy seeds.
  • In a separate small bowl, whisk the kefir, milk, oil, egg, vanilla extract, lemon juice, and lemon zest.
  • Add the wet ingredients to the dry ingredients and mix by hand until just combined. (Do not overmixโ€”lumps in the batter are normal.)
  • Using an ice cream scoop, fill the muffin liners โ…” full (about two scoops per liner).
  • Bake at 400ยฐF for 5 minutes, then reduce the oven temperature to 375ยฐF and bake for an additional 17-20 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
  • Prepare the glaze: Mix the powdered sugar, vanilla extract, and heavy cream until smooth. Drizzle over the cooled muffins.
