For the Crescent Rolls:
- 1 can (8 oz) refrigerated crescent roll dough
- 1/4 cup (1/2 stick) unsalted butter, melted
- 1/4 cup granulated sugar
- 1 tablespoon lemon zest (from about 1 large lemon)
For the Cheesecake Filling:
- 4 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1 tablespoon lemon juice (from about 1/2 lemon)
- 1 teaspoon vanilla extract
For the Lemon Glaze (Optional):
- 1 cup powdered sugar
- 2 tablespoons lemon juice
- 1 tablespoon milk
Instructions
- Prepare the filling: In a medium bowl, beat the softened cream cheese and sugar together until smooth and creamy. Stir in the lemon juice and vanilla extract. Set aside.
- Prepare the crescent rolls: Unroll the crescent roll dough and separate the triangles.
- Assemble the rolls: Spoon about 1 tablespoon of the cheesecake filling onto the wider end of each crescent triangle. Gently spread it out, leaving a small border around the edges. Roll up each crescent from the wide end to the pointed end. Pinch the seams to seal.
- Prepare the topping: In a small bowl, combine the melted butter, sugar, and lemon zest.
- Coat the rolls: Brush each rolled crescent with the melted butter mixture.
- Bake: Place the crescent rolls on a baking sheet lined with parchment paper. Bake in a preheated oven at 375ยฐF (190ยฐC) for 12-15 minutes, or until golden brown.
- Make the glaze (optional): While the rolls are baking, you can prepare the glaze. Whisk together the powdered sugar, lemon juice, and milk until smooth. Adjust the consistency by adding more milk for a thinner glaze or more powdered sugar for a thicker glaze.
- Drizzle with glaze (optional): Once the rolls have cooled slightly, drizzle them with the lemon glaze.
Notes
- Filling Variations: You can add other flavors to the cheesecake filling, such as a teaspoon of almond extract or a pinch of cardamom.
- Fruit: Add fresh berries or other fruit to the filling or on top of the rolls before baking.
