Description

This Lemon-Blueberry Puff Pastry Tart is a light, flaky dessert with a creamy lemon-infused filling, juicy blueberries, and a buttery crumble topping. Made with store-bought puff pastry, this easy yet elegant dessert is perfect for brunch, afternoon tea, or a simple treat!

For the Cream Cheese Layer:

  • 4 oz. cream cheese, softened
  • 1/4 cup confectionersโ€™ sugar
  • Juice and zest of 1/2 lemon

For the Blueberry Filling:

  • 2 cups fresh blueberries
  • 2 tbsp granulated sugar
  • Juice of 1/2 lemon

For the Crumble Topping:

  • 2 tbsp granulated sugar
  • Zest of 1/2 lemon
  • 1/2 cup all-purpose flour
  • 4 tbsp (1/2 stick) unsalted butter, melted

For the Tart Base:

  • 1 sheet frozen puff pastry, thawed

Instructions

Prepare the Oven & Baking Sheet

  1. Preheat oven to 400ยฐF (200ยฐC).
  2. Preheat baking sheet: Place a baking sheet in the oven while it preheats.

Make the Cream Cheese Layer

  1. In a medium bowl, mix together cream cheese, confectionersโ€™ sugar, lemon zest, and lemon juice using a rubber spatula until smooth.

Prepare the Blueberry Filling

  1. In another bowl, toss blueberries with lemon juice (ยฝ lemon) and granulated sugar (2 tbsp). Set aside.

Make the Crumble Topping

  1. In a separate bowl, rub together granulated sugar and lemon zest with your fingers until fragrant.
  2. Add flour and mix well.
  3. Pour in melted butter and stir until combined.

Prepare the Puff Pastry

  1. On a parchment-lined surface, roll out the puff pastry into a 12ร—9-inch rectangle.
  2. Fold in the edges about ยผ inch all around to create a border.

Assemble the Tart

  1. Spread the cream cheese mixture evenly over the center of the pastry, stopping at the border.
  2. Spoon the blueberry mixture evenly on top.
  3. Sprinkle the crumble topping over the blueberries.
  4. Transfer parchment with tart onto the preheated baking sheet.

Bake the Tart

  1. Bake for 20-25 minutes, or until the pastry is golden brown and puffed, and the blueberries are bursting.
  2. Let cool for 10 minutes before slicing and serving.
