Description

Quick and easy enchiladas made with frozen beef and cheese taquitos, smothered in flavorful enchilada sauce and topped with melted Colby Jack cheese and fresh cilantro.


Ingredients

  • 22.5 ounces box frozen beef & cheese taquitos
  • 10 ounces can of enchilada sauce
  • 4 ounces can of mild diced green chilis
  • 8 ounces block of Colby Jack cheese, shredded
  • 1 tablespoon fresh cilantro, chopped

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Arrange the frozen taquitos in a single layer in a 9×13 inch baking dish.
  3. Pour the enchilada sauce evenly over the taquitos.
  4. Sprinkle the diced green chilis over the top.
  5. Cover with shredded Colby Jack cheese.
  6. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly and the taquitos are heated through.
  7. Remove from the oven and garnish with chopped fresh cilantro before serving.

Notes

  • For extra flavor, you can add a sprinkle of cumin or chili powder to the sauce before baking.
  • Serve with sour cream, guacamole, or salsa for added taste.
  • Ensure taquitos are spaced evenly for even heating.
