Description
Quick and easy enchiladas made with frozen beef and cheese taquitos, smothered in flavorful enchilada sauce and topped with melted Colby Jack cheese and fresh cilantro.

- 22.5 ounces box frozen beef & cheese taquitos
- 10 ounces can of enchilada sauce
- 4 ounces can of mild diced green chilis
- 8 ounces block of Colby Jack cheese, shredded
- 1 tablespoon fresh cilantro, chopped
Instructions
- Preheat your oven to 375°F (190°C).
- Arrange the frozen taquitos in a single layer in a 9×13 inch baking dish.
- Pour the enchilada sauce evenly over the taquitos.
- Sprinkle the diced green chilis over the top.
- Cover with shredded Colby Jack cheese.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly and the taquitos are heated through.
- Remove from the oven and garnish with chopped fresh cilantro before serving.
Notes
- For extra flavor, you can add a sprinkle of cumin or chili powder to the sauce before baking.
- Serve with sour cream, guacamole, or salsa for added taste.
- Ensure taquitos are spaced evenly for even heating.
- Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven or microwave.
