Shrimp Mixture
- 200g fresh peeled and deveined shrimp
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 2 green onions, chopped
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1 large egg, beaten
- 1 teaspoon black sesame seeds
Bread & Cooking
- 4 thick slices soft white bread, crusts removed
- Vegetable oil, for frying
Instructions
- Prepare the shrimp mixture: Finely chop the fresh shrimp or pulse them in a food processor until they form a coarse paste. In a bowl, combine the shrimp with minced garlic, grated ginger, chopped green onions, soy sauce, sesame oil, beaten egg, and black sesame seeds. Mix thoroughly until well combined and sticky enough to hold its shape.
- Prepare the bread: Trim the crusts off the white bread slices to ensure even frying. Lightly brush one side of each slice with vegetable oil to help achieve a golden crisp crust when frying.
- Spread the shrimp mixture: Invert the bread so the oiled side faces down. Evenly spread a thick layer of the shrimp mixture on the non-oiled side, pressing gently to ensure it adheres well without falling off during frying.
- Fry until golden and crispy: Heat vegetable oil in a frying pan over medium heat. Place the bread with the shrimp side down and cook for about 3-4 minutes until the shrimp turns opaque and the bottom is golden brown. Carefully flip it and toast the bread side for another 2 minutes or until crisp and browned.
- Drain and serve: Remove the shrimp toasts from the pan and place on paper towels to drain excess oil. Serve warm for the best contrast of crunchy toast and juicy shrimp.
Notes
- Use fresh, high-quality shrimp for best texture and flavor.
- Do not overload the bread with shrimp mixture to prevent falling apart while frying.
- Maintain medium heat when frying to cook evenly and avoid burning.
- A non-stick pan helps prevent sticking and makes flipping easier.
- Press the shrimp mixture lightly to bind without making it dense.
