Description

This quick and flavorful Korean Beef Bowl is perfect for a 30-minute dinner! Made with lean ground beef, brown rice, cucumbers, and gochujang sauce, itโ€™s an easy high-protein meal with bold flavors.


Ingredients

  • 1/4 cup low-sodium soy sauce*
  • 2 teaspoons light brown sugar
  • 1 teaspoon sesame oil
  • 1/2 teaspoon crushed red pepper flakes
  • Cooking spray
  • 1 pound 93% lean ground beef
  • 1/4 cup chopped yellow onion
  • 2 cloves garlic, crushed
  • 1 teaspoon fresh grated ginger
  • 3 cups cooked brown rice
  • 1 small cucumber, sliced (skin on)
  • 2 tablespoons gochujang sauce (or more if desired)*
  • 1/2 tablespoon sesame seeds
  • 2 scallions, sliced (white and green parts)

Instructions

  • Prepare the sauce: In a small bowl, whisk together soy sauce, brown sugar, sesame oil, red pepper flakes, and 2 tablespoons of water.
  • Cook the beef: Heat a large nonstick skillet over high heat. Spray with cooking spray and add ground beef. Cook, breaking it apart, until browned (about 5 minutes).
  • Add aromatics: Stir in onion, garlic, and ginger. Cook for 1 minute.
  • Simmer: Pour the soy sauce mixture over the beef. Cover and simmer on low heat for 10 minutes.
