Description

Crispy breaded chicken served over seasoned rice with fresh salad and a creamy spicy sauce. These homemade zinger rice boxes bring bold flavor, crunchy texture, and perfect meal prep convenience.

  • 4 medium chicken fillets
  • 2 cups long grain rice, uncooked
  • 1 cup corn kernels
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, chopped
  • 2 cups mixed salad greens
  • 0.5 cup mayonnaise
  • 2 tablespoons hot sauce
  • 1 cup all purpose flour
  • 2 large eggs, beaten
  • 1.5 cups breadcrumbs
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt, or to taste
  • 0.5 teaspoon black pepper
  • 1.5 cups vegetable oil, for frying

Instructions

  1. Heat vegetable oil in a large skillet over medium heat until hot but not smoking.
  2. In one bowl combine flour, paprika, garlic powder, salt, and black pepper.
  3. Place beaten eggs in a second bowl and breadcrumbs in a third bowl.
  4. Dredge each chicken fillet in seasoned flour, dip into eggs, then coat thoroughly in breadcrumbs, pressing firmly.
  5. Fry chicken for 4 to 5 minutes per side until golden brown and cooked through. Remove and drain on paper towels.
  6. Cook long grain rice according to package instructions until tender. Stir in a small pinch of paprika and salt for flavor.
  7. In a small bowl mix mayonnaise and hot sauce until smooth.
  8. Slice fried chicken into strips.
  9. Assemble each box by adding rice, sliced chicken, corn, cherry tomatoes, cucumber, and mixed greens. Drizzle with spicy sauce and serve.

Notes

  • Do not overcrowd the pan while frying to maintain crispiness.
  • For extra crunch, use panko breadcrumbs instead of regular breadcrumbs.
  • Keep sauce separate if meal prepping to maintain texture.
  • Reheat chicken in oven or air fryer to restore crispness.
