- 4 medium chicken fillets
- 2 cups long grain rice, uncooked
- 1 cup corn kernels
- 1 cup cherry tomatoes, halved
- 1 medium cucumber, chopped
- 2 cups mixed salad greens
- 0.5 cup mayonnaise
- 2 tablespoons hot sauce
- 1 cup all purpose flour
- 2 large eggs, beaten
- 1.5 cups breadcrumbs
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon salt, or to taste
- 0.5 teaspoon black pepper
- 1.5 cups vegetable oil, for frying
Instructions
- Heat vegetable oil in a large skillet over medium heat until hot but not smoking.
- In one bowl combine flour, paprika, garlic powder, salt, and black pepper.
- Place beaten eggs in a second bowl and breadcrumbs in a third bowl.
- Dredge each chicken fillet in seasoned flour, dip into eggs, then coat thoroughly in breadcrumbs, pressing firmly.
- Fry chicken for 4 to 5 minutes per side until golden brown and cooked through. Remove and drain on paper towels.
- Cook long grain rice according to package instructions until tender. Stir in a small pinch of paprika and salt for flavor.
- In a small bowl mix mayonnaise and hot sauce until smooth.
- Slice fried chicken into strips.
- Assemble each box by adding rice, sliced chicken, corn, cherry tomatoes, cucumber, and mixed greens. Drizzle with spicy sauce and serve.
Notes
- Do not overcrowd the pan while frying to maintain crispiness.
- For extra crunch, use panko breadcrumbs instead of regular breadcrumbs.
- Keep sauce separate if meal prepping to maintain texture.
- Reheat chicken in oven or air fryer to restore crispness.
