Description

These juicy ground chicken burgers are packed with Mediterranean-inspired flavors and are super versatileโ€”grill, bake, or customize them with your favorite toppings! Tender, moist, and perfectly seasoned with fresh herbs, garlic, and a hint of spice, these burgers are topped with a creamy homemade garlic mayo. Theyโ€™re sure to become a regular in your meal rotation!


Ingredients

For the Ground Chicken Burgers:

  • 2 lb ground chicken

  • 1 medium red onion, grated or finely chopped (about 2/3 cup)

  • 1/4 cup fresh cilantro, finely chopped

  • 1/4 cup fresh parsley, finely chopped

  • 2 Tbsp tomato paste

  • 2 jalapeรฑos, finely chopped (with seeds for spice!)

  • 3 cloves garlic, peeled and grated

  • 2 Tbsp neutral oil

  • 2 tsp ground cumin

  • 2 tsp Aleppo pepper flakes

  • 2 tsp kosher salt

  • 1 tsp sumac

  • 1 tsp fresh lemon zest (from 1/2 lemon)

For the Garlic Mayo:

  • 2/3 cup mayonnaise (Dukeโ€™s preferred)

  • 2 cloves garlic, peeled and grated

  • 2 Tbsp fresh lemon juice

  • 1 Tbsp fresh parsley, finely chopped

  • 1/2 tsp kosher salt

For Serving:

  • Burger buns (e.g., potato buns, whole wheat buns, brioche)

  • Suggested toppings: sliced tomatoes, thinly sliced raw onion, pickled red onions, lettuce, pickled jalapeรฑos, pickles, cheese


Instructions

  • Combine Burger Ingredients:
    Preheat the grill to medium heat (375-400ยฐF). In a large bowl, combine the ground chicken, grated red onion, chopped cilantro, chopped parsley, tomato paste, chopped jalapeรฑos, and grated garlic. Add oil, cumin, Aleppo pepper, salt, sumac, and lemon zest. Mix thoroughly.

  • Form the Patties:
    Wet your hands with water, then divide the mixture into 6 large (or 8 small) portions. Form into round, flat patties.

  • Cook the Burgers:
    Lightly coat the grill with grill spray. Place the patties on direct heat and cook for 5-6 minutes per side or until the internal temperature reaches 165ยฐF. If adding cheese, place it on top in the last 3 minutes. Let the burgers rest for 5-10 minutes.

  • Make the Garlic Mayo:
    While the burgers rest, combine mayonnaise, grated garlic, lemon juice, parsley, and salt in a bowl. Mix well and adjust seasoning to taste.

  • Assemble and Serve:
    Spoon some garlic mayo on each side of the bun. Place a chicken burger on the bottom bun and add desired toppings. Top with the other half of the bun and enjoy immediately!
