This copycat Joe & the Juice tuna sandwich is crispy, creamy, and packed with bold flavors! Fresh sourdough bread is layered with a zesty tuna mix, smooth avocado, juicy tomatoes, and a punchy pesto spread. Finish it off with a smoky chipotle aioli for a sandwich thatโs even better than the original!
Ingredients
Tuna Filling:

1/2 tbsp honey

1/2 tsp black pepper

1/2 tsp chili powder

2 tbsp adobo paste

Chipotle peppers (pureed into a paste, to taste)

6 slices sourdough bread

3 tbsp pesto

1 large tomato, sliced

1 avocado, sliced

Hot sauce (for serving)
Instructions

Prepare the Tuna Filling:

In a bowl, mash the drained tuna.

Mix in mayonnaise, lemon juice, red onion, black pepper, salt, jalapeรฑos, mustard, and cilantro. Stir until well combined.

Make the Chipotle Aioli (Optional):

In a small bowl, whisk together mayonnaise, sour cream, lime juice, honey, black pepper, chili powder, adobo paste, and chipotle pepper paste.

Mix until smooth and set aside.
