Description

This copycat Joe & the Juice tuna sandwich is crispy, creamy, and packed with bold flavors! Fresh sourdough bread is layered with a zesty tuna mix, smooth avocado, juicy tomatoes, and a punchy pesto spread. Finish it off with a smoky chipotle aioli for a sandwich thatโ€™s even better than the original!


Ingredients

Tuna Filling:

  • 12 oz can tuna, drained

  • 1/2 cup mayonnaise

  • 1/2 tbsp lemon juice

  • 1/4 cup diced red onion

  • 1/4 tsp black pepper (or more to taste)

  • 1/4 tsp salt (to taste)

  • 2-3 tbsp diced jalapeรฑos

  • 1/2 tbsp yellow mustard

  • 1 tbsp chopped cilantro

Chipotle Aioli (Optional):

  • 3/4 cup mayonnaise

  • 1/4 cup sour cream

  • Juice of 1 lime

  • 1/2 tbsp honey

  • 1/2 tsp black pepper

  • 1/2 tsp chili powder

  • 2 tbsp adobo paste

  • Chipotle peppers (pureed into a paste, to taste)

Assembly:

  • 6 slices sourdough bread

  • 3 tbsp pesto

  • 1 large tomato, sliced

  • 1 avocado, sliced

  • Hot sauce (for serving)


Instructions

  • Prepare the Tuna Filling:

    • In a bowl, mash the drained tuna.

    • Mix in mayonnaise, lemon juice, red onion, black pepper, salt, jalapeรฑos, mustard, and cilantro. Stir until well combined.

  • Make the Chipotle Aioli (Optional):

    • In a small bowl, whisk together mayonnaise, sour cream, lime juice, honey, black pepper, chili powder, adobo paste, and chipotle pepper paste.

    • Mix until smooth and set aside.

  • Toast the Bread:

    • Preheat a grill pan or panini press and lightly spray with oil.

    • Toast the sourdough slices until crispy and golden brown.

  • Assemble the Sandwiches:

    • Spread pesto on one slice of each sandwich.

    • Layer with sliced avocado, tomato, and a generous scoop of the tuna filling.

    • Spread chipotle mayo on the other slice and close the sandwich.
