Description

These crispy, cheesy pinwheels are inspired by Montana’s famous appetizer! Soft flour tortillas are rolled with a creamy, spicy filling made with jalapeños, Colby Jack cheese, and Cajun seasoning, then baked or air-fried until golden brown. Serve them with a cool, zesty pesto sour cream dip for the perfect party snack!

  • 1/2 red bell pepper, diced
  • 2 stalks green onion, chopped
  • 1/2 cup pickled jalapeños, finely minced
  • 1 cup Colby Jack cheese, shredded
  • 1 1/2 tsp garlic powder
  • 1 1/2 tsp Cajun seasoning (Slap Ya Mama or Tony’s)
  • 1 tsp sea salt
  • 4 medium-sized flour tortillas

For the Dipping Sauce

  • 1/2 cup sour cream
  • 2 tbsp basil pesto
  • 1 tsp garlic powder

Instructions

Step 1: Prepare the Filling

  1. In a large mixing bowl, combine cream cheese, bell pepper, green onion, jalapeños, shredded cheese, garlic powder, Cajun seasoning, and sea salt.
  2. Mix until smooth and evenly combined.

Step 2: Roll and Chill

  1. Spread the cream cheese mixture evenly across each flour tortilla, covering edge to edge.
  2. Roll the tortillas tightly to keep the filling inside.
  3. Arrange the rolled tortillas on a baking sheet and refrigerate for 30 minutes to 1 hour.

Step 3: Cook the Pinwheels

  1. Once chilled, slice the tortilla rolls into 6 equal rounds.
  2. Arrange in an air fryer basket or a baking dish.
  3. Air Fryer Method: Air fry at 375°F for 15 minutes until golden and crispy.
  4. Oven Method: Bake at 375°F for 20 minutes until lightly browned.

Step 4: Make the Dipping Sauce

  1. In a small bowl, mix sour cream, basil pesto, and garlic powder.
  2. Keep refrigerated until serving.
