Soft flour tortillas are rolled with a creamy, spicy filling made with jalapeños, Colby Jack cheese, and Cajun seasoning, then baked or air-fried until golden brown. For the Pinwheels
- 8 oz cream cheese, softened
- 1/2 red bell pepper, diced
- 2 stalks green onion, chopped
- 1/2 cup pickled jalapeños, finely minced
- 1 cup Colby Jack cheese, shredded
- 1 1/2 tsp garlic powder
- 1 1/2 tsp Cajun seasoning (Slap Ya Mama or Tony’s)
- 1 tsp sea salt
- 4 medium-sized flour tortillas
For the Dipping Sauce
- 1/2 cup sour cream
- 2 tbsp basil pesto
- 1 tsp garlic powder
Instructions
Step 1: Prepare the Filling
- In a large mixing bowl, combine cream cheese, bell pepper, green onion, jalapeños, shredded cheese, garlic powder, Cajun seasoning, and sea salt.
- Mix until smooth and evenly combined.
Step 2: Roll and Chill
- Spread the cream cheese mixture evenly across each flour tortilla, covering edge to edge.
- Roll the tortillas tightly to keep the filling inside.
- Arrange the rolled tortillas on a baking sheet and refrigerate for 30 minutes to 1 hour.
Step 3: Cook the Pinwheels
- Once chilled, slice the tortilla rolls into 6 equal rounds.
- Arrange in an air fryer basket or a baking dish.
- Air Fryer Method: Air fry at 375°F for 15 minutes until golden and crispy.
- Oven Method: Bake at 375°F for 20 minutes until lightly browned.
Step 4: Make the Dipping Sauce
- In a small bowl, mix sour cream, basil pesto, and garlic powder.
- Keep refrigerated until serving.

- For extra crispiness, brush the pinwheels with a little oil before cooking.
