- 1 cup (113 g) sharp cheddar cheese, finely shredded
- 1 tsp baking powder
- 1/2 tsp garlic powder
- 1/2 tsp kosher salt
- 1/2 tsp granulated sugar
- 1 large egg, room temperature
- 1/2 cup (122.5 g) whole milk
- 1 tbsp unsalted butter, melted
- 1 can (15.25 oz) sweet corn, drained (about 1 1/2 cups kernels)
- 2 medium jalapeños, seeded, finely diced
- Vegetable oil, for frying
- Parsley, for garnish
Instructions
- In a medium bowl, mix flour, shredded cheese, baking powder, garlic powder, salt, and sugar until well combined.
- In another bowl, whisk together egg, milk, and melted butter.
- Add the wet mixture to the dry and stir until just combined. Avoid overmixing.
- Fold in corn and diced jalapeños gently.
- Heat vegetable oil in a heavy pot over medium heat until it reaches 350°F (175°C).
- Drop 4–5 spoonfuls of batter into the oil per batch. Fry for 2–3 minutes until golden brown.
- Remove nuggets with a slotted spoon and drain on paper towels.
- Garnish with parsley and serve immediately.
