  • 1 cup (125 g) all-purpose flour
  • 1 cup (113 g) sharp cheddar cheese, finely shredded
  • 1 tsp baking powder
  • 1/2 tsp garlic powder
  • 1/2 tsp kosher salt
  • 1/2 tsp granulated sugar
  • 1 large egg, room temperature
  • 1/2 cup (122.5 g) whole milk
  • 1 tbsp unsalted butter, melted
  • 1 can (15.25 oz) sweet corn, drained (about 1 1/2 cups kernels)
  • 2 medium jalapeños, seeded, finely diced
  • Vegetable oil, for frying
  • Parsley, for garnish

Instructions

  1. In a medium bowl, mix flour, shredded cheese, baking powder, garlic powder, salt, and sugar until well combined.
  2. In another bowl, whisk together egg, milk, and melted butter.
  3. Add the wet mixture to the dry and stir until just combined. Avoid overmixing.
  4. Fold in corn and diced jalapeños gently.
  5. Heat vegetable oil in a heavy pot over medium heat until it reaches 350°F (175°C).
  6. Drop 4–5 spoonfuls of batter into the oil per batch. Fry for 2–3 minutes until golden brown.
  7. Remove nuggets with a slotted spoon and drain on paper towels.
  8. Garnish with parsley and serve immediately.
