- White beans - 15 ounces
- Chicken broth - 4 cups
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Sour cream - 1/3 cup
- Green onions - 2 tablespoons
Instructions
- Heat a large pot over medium heat.
- Add olive oil and sausage, cooking until browned.
- Stir in onion and garlic and cook until soft.
- Add zucchini, bell peppers, tomatoes, beans, and broth.
- Simmer gently for 20 minutes.
- Season with salt and black pepper.
- Serve topped with sour cream and green onions.
