Description

A light yet hearty soup filled with sausage, summer vegetables, beans, and a flavorful tomato broth.


Ingredients

  • Yellow onion - 1 medium
  • Zucchini - 2 medium
  • Red bell pepper - 1 large
  • Yellow bell pepper - 1 large
  • Garlic cloves - 3
  • Diced tomatoes - 14 ounces
  • White beans - 15 ounces
  • Chicken broth - 4 cups
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Sour cream - 1/3 cup
  • Green onions - 2 tablespoons

Instructions

  1. Heat a large pot over medium heat.
  2. Add olive oil and sausage, cooking until browned.
  3. Stir in onion and garlic and cook until soft.
  4. Add zucchini, bell peppers, tomatoes, beans, and broth.
  5. Simmer gently for 20 minutes.
  6. Season with salt and black pepper.
