Scale
- 6–8 pieces chicken (bone-in or boneless)
- 1/2 cup Italian dressing
- 1 small red bell pepper, sliced
- 1 small green bell pepper, sliced
- 1/2 small yellow onion, sliced
- 2 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp Italian seasoning
- 1 tsp adobo seasoning
- 1 tsp salt (or more to taste)
- 3 tbsp unsalted butter (optional)
Instructions
- Marinate the Chicken: In a large bowl, pat the chicken dry. Add sliced bell peppers and onions, then pour in the Italian dressing and all seasonings. Mix well and let marinate for at least 1 hour (or overnight for deeper flavor).
- Prepare for Baking: Preheat oven to 375°F (190°C). Transfer the marinated chicken to a 13×9-inch baking dish. Sprinkle with additional seasoning if desired. If using butter, place small slices over the chicken for extra richness.
- Bake: Bake uncovered in the middle rack for 1 hour or until the chicken is fully cooked and golden brown on top.
- Serve: Enjoy hot with rice, pasta, or a fresh side salad.
Notes
- Marinating overnight enhances the flavor.
- Bone-in chicken takes longer to cook than boneless, so adjust cooking time as needed.
- Serve with mashed potatoes, roasted vegetables, or crusty bread for a complete meal.
