Description

Ingredients

  • 1 tablespoon vegetable oil

  • 1 small onion, finely diced

  • 1 cup frozen carrot, pea, and corn medley, defrosted

  • 1 garlic clove, minced

  • 2 tablespoons raisins

  • 3 cups cooked rice

  • 4 tablespoons ketchup

  • 2 tablespoons low-sodium soy sauce

  • 3/4 teaspoon black pepper

  • 4 sunny-side-up eggs, for garnish

 
  • 4 slices of ham, for garnish


Instructions

  • Heat a large nonstick skillet over medium heat and add vegetable oil.

  • Sauté the onions until softened, about 7 to 10 minutes.

  • Add the vegetable medley, garlic, and raisins, cooking for about 30 seconds or until fragrant.

  • Stir in the cooked rice, using a spatula to break up any clumps.

  • Mix in the ketchup, soy sauce, and black pepper, stirring until evenly combined.

  • Cook on medium-high heat for 3 to 5 minutes, allowing some rice to crisp up.

 

  • Serve immediately, topped with freshly cooked sunny-side-up eggs and crispy fried ham slices. Enjoy!


Notes
