Instant Pot Zuppa Toscana Soup is a hearty, flavorful soup featuring savory pork sausage, tender potatoes, and baby kale, all cooked quickly in an Instant Pot and finished with rich cream for a comforting meal.

For the Instant Pot Zuppa Toscana Soup:

  • 1 tablespoon extra virgin olive oil
  • 24 ounces No-Sugar All Natural Pork Sausage (2 × 12 ounce packages)
  • 1 tablespoon Italian seasoning
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon crushed red pepper flakes
  • 1 teaspoon kosher salt
  • 6 cups chicken stock
  • 6 medium russet potatoes, cut into 1/2-inch cubes
  • 1 cup heavy cream
  • 5 ounces baby kale

Instructions

  1. Set the Instant Pot to ‘Sauté’ mode and heat olive oil. Cook sausage until browned, breaking into crumbles.
  2. Add Italian seasoning, onion powder, garlic powder, crushed red pepper flakes, and kosher salt. Stir to combine.
  3. Add chicken stock and diced potatoes. Stir well.
  4. Seal the Instant Pot lid and cook on ‘Manual’ or ‘Pressure Cook’ for 10 minutes.
  5. Quick-release the pressure once cooking is complete.
  6. Stir in heavy cream and baby kale. Let the residual heat wilt the kale.
  7. Adjust seasoning to taste and serve hot.

Notes

  • Use mild or spicy sausage depending on desired heat level.
  • Baby kale can be substituted with regular kale, chopped finely.
  • For a lighter version, substitute heavy cream with half-and-half or milk.
  • Serve with crusty bread or garlic rolls for a complete meal.
