For the Instant Pot Zuppa Toscana Soup:
- 1 tablespoon extra virgin olive oil
- 24 ounces No-Sugar All Natural Pork Sausage (2 × 12 ounce packages)
- 1 tablespoon Italian seasoning
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon crushed red pepper flakes
- 1 teaspoon kosher salt
- 6 cups chicken stock
- 6 medium russet potatoes, cut into 1/2-inch cubes
- 1 cup heavy cream
- 5 ounces baby kale
Instructions
- Set the Instant Pot to ‘Sauté’ mode and heat olive oil. Cook sausage until browned, breaking into crumbles.
- Add Italian seasoning, onion powder, garlic powder, crushed red pepper flakes, and kosher salt. Stir to combine.
- Add chicken stock and diced potatoes. Stir well.
- Seal the Instant Pot lid and cook on ‘Manual’ or ‘Pressure Cook’ for 10 minutes.
- Quick-release the pressure once cooking is complete.
- Stir in heavy cream and baby kale. Let the residual heat wilt the kale.
- Adjust seasoning to taste and serve hot.

- Use mild or spicy sausage depending on desired heat level.
- Baby kale can be substituted with regular kale, chopped finely.
