- 3 cups water
- 4 pounds sweet potatoes, peeled and cut into large cubes
- 1/2 cup heavy cream
- 1/2 cup brown sugar, packed
- 1/2 cup unsalted butter, at room temperature
- 1 teaspoon cinnamon
- 1/2 teaspoon kosher salt
Instructions
- Pour 3 cups of water into the Instant Pot and place the trivet inside.
- Add the cubed sweet potatoes on top of the trivet.
- Close the lid and set the valve to sealing. Cook on high pressure for 10 minutes.
- Quick release the pressure carefully once cooking is complete.
- Drain the sweet potatoes and transfer them to a large mixing bowl.
- Add heavy cream, brown sugar, butter, cinnamon, and salt. Mash until smooth and creamy.
- Adjust sweetness or seasoning to taste. Serve warm.
Notes
- For a lighter version, substitute heavy cream with milk or a non-dairy alternative.
- Use a potato masher or electric mixer depending on your preferred texture.
