Description

This Instant Pot Creamy Italian Chicken is a rich, flavorful, and easy one-pot meal. Made with tender chicken, creamy sauce, and Italian herbs, it’s perfect for a healthy homemade dinner. Enjoy it over pasta, rice, or a low-carb option like cauliflower rice.


Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1 cup chicken broth (low sodium)
  • 1/2 cup heavy cream
  • 4 oz cream cheese, softened
  • 1/2 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 tsp red pepper flakes (optional)
  • 1 cup fresh spinach, chopped
  • 2 tbsp fresh basil, chopped (for garnish)

Instructions

  • Sear the Chicken:
    • Set the Instant Pot to Sauté mode and heat olive oil.
    • Season chicken breasts with salt, pepper, garlic powder, and Italian seasoning.
    • Sear for 2-3 minutes per side until lightly browned. Remove and set aside.
  • Deglaze the Pot:
    • Pour in chicken broth and scrape up any browned bits from the bottom.
  • Pressure Cook:
    • Add chicken back into the pot, followed by garlic, sun-dried tomatoes, and red pepper flakes.
    • Seal the Instant Pot lid, set the valve to Sealing, and cook on High Pressure for 10 minutes.
    • Once done, let the pressure naturally release for 5 minutes, then quick release.
  • Make the Creamy Sauce:
    • Remove the chicken and set it aside.
    • Stir in cream cheese, heavy cream, and Parmesan cheese until melted and smooth.
    • Add spinach, stirring until wilted.
  • Finish & Serve:
    • Slice or shred the chicken and return it to the sauce.
    • Garnish with fresh basil and serve over pasta, rice, or a low-carb alternative.
