  • 1/2 medium sweet onion, diced
  • 3 cloves garlic, minced
  • 1/4 cup dry white wine
  • 1 (16 oz) package frozen chopped spinach, thawed and squeezed dry
  • 1 (14 oz) can artichoke hearts, drained and coarsely chopped
  • 1/2 tsp crushed red pepper flakes
  • 1 (8 oz) package cream cheese, cubed
  • 1 cup sour cream
  • 1/2 cup freshly grated Parmesan
  • Kosher salt and freshly ground black pepper, to taste
  • 1 1/2 cups shredded mozzarella cheese

Instructions

  1. Heat olive oil in a large cast iron skillet over medium heat. Add the diced onion and cook, stirring frequently, until translucent (about 2-3 minutes).
  2. Stir in the minced garlic and cook for about 1 minute, until fragrant.
  3. Stir in the white wine, scraping up any browned bits from the bottom of the skillet.
  4. Stir in the spinach, artichokes, and crushed red pepper flakes. Cook until the mixture is warm and the excess liquid has reduced (about 4 minutes).
  5. Stir in the cubed cream cheese and sour cream. Cook until melted and heated through (about 5 minutes).
  6. Remove from heat once the dip is smooth and creamy.
  7. Serve hot with tortilla chips or your favorite dipping crackers.

Notes

  • For extra flavor, add a sprinkle of grated Parmesan on top before serving.
  • If you prefer a spicier dip, increase the crushed red pepper flakes.
