Description

These Hot Honey Sweet Potato Beef Bowls are the perfect blend of sweet, spicy, and savory, making them a high-protein dinner option that’s both nourishing and delicious. Roasted sweet potatoes, lean beef, black beans, and fresh veggies are brought together with a drizzle of hot honey and a dollop of cottage cheese. This easy bowl recipe is ideal for meal prep, quick high protein meals, and healthy recipes lunch or dinner.


Ingredients

For the sweet potatoes:

  • 600g sweet potato, peeled and diced into 2 cm cubes

  • 1 tbsp taco seasoning (store-bought or homemade)

  • 1 tbsp olive oil

For the beef mince:

  • 500g lean beef mince

  • 400g tin black beans, drained

  • 1 tbsp taco seasoning (store-bought or homemade)

  • 2 tbsp water

For the hot honey:

  • 4 tbsp honey

  • 1 tsp chilli flakes (adjust to taste)

To serve:

  • 2 cups (450g) cottage cheese

  • 2 cups shredded iceberg lettuce

  • 1 punnet cherry tomatoes, halved

  • 1/2 red onion, thinly sliced

Homemade Taco Seasoning (makes about 3 tbsp):

 

  • 1/2 tsp sea salt

  • 1/4 tsp black pepper

  • 2 tsp smoked paprika

  • 2 tsp ground cumin

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1/2 tsp dried oregano

  • 1/2 tsp ground coriander

  • 1/2 tsp chilli powder (adjust to taste)

  • 1/4 tsp cayenne pepper (optional)


Instructions

  • Roast the Sweet Potatoes:
    Preheat the oven to 220°C (fan-forced 200°C) and line a baking tray with baking paper. Toss sweet potato cubes with olive oil and taco seasoning. Spread evenly and roast for 30 minutes, flipping halfway, until golden and tender.

  • Cook the Beef Mince:
    In a skillet over medium-high heat, cook beef mince until browned, breaking it apart with a wooden spoon. Add black beans, taco seasoning, and water. Stir and cook for 1–2 minutes until well combined. Remove from heat.

  • Make the Hot Honey:
    In a small saucepan over low heat, warm the honey and chilli flakes for 1–2 minutes. Remove from heat and let sit for a minute to infuse the flavors.

 

  • Assemble the Bowls:
    Divide roasted sweet potatoes, beef mince mixture, cottage cheese, lettuce, cherry tomatoes, and red onion between four serving bowls. Drizzle with hot honey and serve immediately.


Notes

For an extra layer of flavor, use the homemade taco seasoning—it stores well and adds bold, customizable spice. Want it dairy-free? Swap cottage cheese for guacamole or dairy-free yogurt.
