- 3 1/2 cups (440 g) all purpose flour
- 1/4 cup (25 g) unsweetened cocoa powder
- 1/4 cup (50 g) granulated sugar
- 1/2 cup (100 g) brown sugar
- 2 1/4 teaspoons (7 g) active dry yeast
- 1 cup (240 ml) warm milk
- 1/3 cup (75 g) unsalted butter, melted
- 2 large eggs (about 100 g without shells)
- 1 teaspoon (6 g) salt
- 1 tablespoon (8 g) ground cinnamon
- 1 cup (170 g) semi sweet chocolate chips
- 1/2 cup (120 ml) heavy cream
- 1 cup (120 g) powdered sugar
- 1 teaspoon (5 ml) vanilla extract
Instructions
- In a bowl, combine warm milk and active dry yeast. Let sit for 5 minutes until slightly foamy.
- Add granulated sugar, melted butter, eggs, cocoa powder, and salt. Mix until combined.
- Gradually add all purpose flour and mix until a soft dough forms.
- Knead the dough for 8 to 10 minutes until smooth and elastic.
- Place dough in a greased bowl, cover, and let rise for 1 hour or until doubled in size.
- Roll the dough into a large rectangle on a lightly floured surface.
- Sprinkle brown sugar and ground cinnamon evenly over the surface, then scatter semi sweet chocolate chips on top.
- Roll the dough tightly into a log and slice into 12 even rolls.
- Place rolls into a greased 9×13 inch baking dish. Cover and let rise for 30 minutes.
- Preheat oven to 350°F (175°C) and bake for 20 to 25 minutes until set but still soft in the center.
- Warm heavy cream gently and whisk with powdered sugar and vanilla extract until smooth to create frosting.
- Spread frosting over warm rolls and serve.
Notes
- Make sure milk is warm, not hot, to properly activate the yeast.
- Do not overbake to keep the centers soft and gooey.
- Allow the rolls to rise fully for the fluffiest texture.
- Store leftovers in an airtight container and reheat gently before serving.
