Description

Soft and fluffy hot chocolate cinnamon rolls made with cocoa infused dough, a gooey cinnamon brown sugar filling with chocolate chips, and topped with a rich chocolate frosting that melts into every swirl.

Ingredients

Units Scale
  • 3 1/2 cups (440 g) all purpose flour
  • 1/4 cup (25 g) unsweetened cocoa powder
  • 1/4 cup (50 g) granulated sugar
  • 1/2 cup (100 g) brown sugar
  • 2 1/4 teaspoons (7 g) active dry yeast
  • 1 cup (240 ml) warm milk
  • 1/3 cup (75 g) unsalted butter, melted
  • 2 large eggs (about 100 g without shells)
  • 1 teaspoon (6 g) salt
  • 1 tablespoon (8 g) ground cinnamon
  • 1 cup (170 g) semi sweet chocolate chips
  • 1/2 cup (120 ml) heavy cream
  • 1 cup (120 g) powdered sugar
  • 1 teaspoon (5 ml) vanilla extract

Instructions

  1. In a bowl, combine warm milk and active dry yeast. Let sit for 5 minutes until slightly foamy.
  2. Add granulated sugar, melted butter, eggs, cocoa powder, and salt. Mix until combined.
  3. Gradually add all purpose flour and mix until a soft dough forms.
  4. Knead the dough for 8 to 10 minutes until smooth and elastic.
  5. Place dough in a greased bowl, cover, and let rise for 1 hour or until doubled in size.
  6. Roll the dough into a large rectangle on a lightly floured surface.
  7. Sprinkle brown sugar and ground cinnamon evenly over the surface, then scatter semi sweet chocolate chips on top.
  8. Roll the dough tightly into a log and slice into 12 even rolls.
  9. Place rolls into a greased 9×13 inch baking dish. Cover and let rise for 30 minutes.
  10. Preheat oven to 350°F (175°C) and bake for 20 to 25 minutes until set but still soft in the center.
  11. Warm heavy cream gently and whisk with powdered sugar and vanilla extract until smooth to create frosting.
  12. Spread frosting over warm rolls and serve.

Notes

  • Make sure milk is warm, not hot, to properly activate the yeast.
  • Do not overbake to keep the centers soft and gooey.
  • Allow the rolls to rise fully for the fluffiest texture.
  • Store leftovers in an airtight container and reheat gently before serving.
