- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 pinch salt
- 3/4 cup good quality butter
- 3/4 cup sugar
- 3 organic eggs
- 1 teaspoon vanilla extract
- 2 medium ripe pears (about 170g each), peeled, cored, and sliced
- 2 tablespoons Demerara sugar, divided
- 2 tablespoons good quality honey
Instructions
- Preheat oven to 350°F (175°C). Line an 8-inch round cake pan with parchment paper and butter the sides.
- In a bowl, whisk together flour, baking powder, and salt.
- In a separate bowl, cream butter and sugar until pale and fluffy. Beat in eggs one at a time, then stir in vanilla.
- Fold the dry ingredients into the wet mixture until just combined.
- Pour batter into the prepared pan and smooth the top. Arrange sliced pears in a circular pattern on top.
- Sprinkle 1 tablespoon of Demerara sugar over the pears. Bake for 40–45 minutes, or until a toothpick comes out clean.
- Drizzle warm honey over the hot cake and sprinkle remaining Demerara sugar. Let cool before serving.
