Description
These homemade toffee chunks are a quick and simple treat thatโs free from processed additives. Perfect on their own or added to your favorite cakes, cookies, and other sweet recipes.

- 1 cup light brown sugar, lightly packed
- 8 tbsp butter, one stick unsalted
- 1 tsp kosher salt (reduce to 1/2 tsp if using salted butter)
- 1/4 cup water
Instructions
- Line a 9โณ x 13โณ baking sheet with parchment paper.
- Melt butter, sugar, and salt in a nonstick saucepan over medium heat. Whisk until combined, about 1-2 minutes.
- Add water and continue to whisk vigorously, scraping the bottom of the pan to prevent burning.
- Use a candy thermometer to cook the mixture until it reaches 285ยฐF (soft-crack stage), about 10-15 minutes.
- Immediately pour the hot toffee onto the baking sheet, spreading it into an even layer.
- Let it harden in the freezer for 20-30 minutes.
- Once hardened, remove from the freezer and break into large chunks. Then, use a mallet or rolling pin to break the toffee into bite-size pieces.
Notes
- Be sure to use a candy thermometer to ensure the toffee reaches the correct temperature.
- This recipe can easily be doubled if you need more toffee chunks for larger batches of desserts.
