Instructions
- Make the Crust:
- Preheat oven to 325ยฐF (160ยฐC).
- In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter until the texture resembles wet sand.
- Press the mixture into the bottom of a 9-inch springform pan.
- Bake for 8-10 minutes, then let cool.
- Prepare the Cheesecake Filling:
- In a large bowl, beat softened cream cheese and sugar until smooth.
- Add eggs one at a time, mixing well after each addition.
- Mix in vanilla extract, sour cream, and strawberry puree. Add pink food coloring if desired.
- Pour the filling over the cooled crust and smooth the top.
