- 1 1/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 tablespoons sugar
- 3/4 cup milk
- 3 tablespoons melted butter
- 2 tablespoons maple syrup (plus more for serving)
- 1/2 pound ground sausage, cooked and crumbled
- 3/4 cup shredded cheddar cheese
- 2 large eggs
Instructions
- Preheat oven to 375°F (190°C) and grease a muffin tin.
- In a large bowl, whisk flour, baking powder, salt, and sugar together.
- In another bowl, whisk eggs, milk, melted butter, and maple syrup.
- Combine wet and dry ingredients, stirring just until blended.
- Fold in cooked sausage and half of the cheese.
- Spoon batter into muffin cups, filling ¾ full, and sprinkle remaining cheese on top.
- Bake for 18–20 minutes or until golden and puffed.
- Let cool for 5 minutes before removing from the tin. Serve warm with extra maple syrup if desired.
Notes
- Do not overmix the batter to keep muffins light and fluffy.
- Brown the sausage well before adding for deeper flavor.
- Store leftovers in the fridge up to 4 days or freeze for 2 months.
- Reheat in the oven for 5 minutes to keep texture perfect.
