Description

Creamy, buttery mashed potatoes loaded with sharp cheddar cheese, crispy bacon, tangy sour cream, and fresh green onions for the ultimate comforting side dish.


Ingredients

  • 3 pounds russet potatoes, peeled and cut into chunks
  • 4 tablespoons unsalted butter
  • 1 cup whole milk, warmed
  • 1 cup sour cream
  • 1.5 cups cheddar cheese, shredded
  • 8 slices bacon, cooked crispy and chopped
  • 3 green onions, sliced
  • 1.5 teaspoons salt, or to taste
  • 1/2 teaspoon black pepper

Instructions

  1. Place peeled and chopped potatoes in a large pot and cover with cold water. Add a generous pinch of salt.
  2. Bring to a boil over medium high heat, then reduce to a simmer and cook for 15 to 20 minutes until fork tender.
  3. Drain the potatoes thoroughly and return them to the warm pot.
  4. Add unsalted butter and begin mashing until mostly smooth.
  5. Gradually stir in warmed whole milk and sour cream, mashing gently until creamy and fluffy.
  6. Fold in shredded cheddar cheese and most of the chopped bacon. Season with salt and black pepper to taste.
  7. Transfer to a serving bowl and top with remaining bacon and sliced green onions before serving.

Notes

  • Warm the milk before adding to keep the potatoes hot and fluffy.
  • Avoid overmixing to prevent a gluey texture.
  • If reheating, add a splash of milk to restore creaminess.
