Ingredients
Units
Scale
- 2 cups granulated sugar
- 3/4 cup water
- 2/3 cup light corn syrup
- 1–2 packets Kool-Aid (any flavor; adjust for flavor intensity)
- Lollipop sticks
- Optional: food coloring (for enhanced color, though Kool-Aid often suffices)
Instructions
- Prepare Molds:
- Arrange lollipop sticks in silicone lollipop molds or on a silicone mat for free-form lollipops.
- Cook the Sugar Mixture:
- In a medium saucepan, combine sugar, water, and corn syrup. Stir over medium heat until the sugar dissolves completely.
- Boil to Hard Crack Stage:
- Stop stirring and let the mixture boil. Attach a candy thermometer and cook until it reaches 300°F (hard crack stage).
- Add Flavor and Color:
- Remove from heat immediately. Stir in the Kool-Aid powder. Add food coloring if desired for a more vibrant hue.
- Pour into Molds:
- Carefully pour the hot syrup into the molds or onto the silicone mat around the lollipop sticks. Work quickly, as the mixture sets fast.
- Set and Harden:
- Let the lollipops cool at room temperature until completely hard, about 30 minutes to 1 hour, depending on size.
- Unmold and Store:
- Gently remove the lollipops from the molds or peel them off the silicone mat. Wrap each in cellophane or plastic wrap and store in an airtight container at room temperature.
Notes
- If the mixture hardens before you’ve finished pouring, gently reheat it, but avoid overcooking.
- Create variety by using multiple Kool-Aid flavors for a fun mix of colors and tastes.
