Ingredients

  • 1 cup dried figs, roughly chopped, stems removed
  • 1 tbsp honey
  • 6 tbsp unsalted butter, softened
  • 1/2 cup sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/2 cups white whole wheat flour

Instructions

  • Preheat the Oven:
    Preheat your oven to 350ยฐF (175ยฐC).
  • Prepare the Figs:
    Place the dried figs in a small bowl, cover them with hot water, and soak for 10 minutes. Drain the figs and reserve 1 tablespoon of the soaking liquid.
  • Make the Fig Filling:
    Place the soaked figs, honey, and reserved soaking liquid in a food processor. Puree until smooth and spreadable. Set aside.
  • Make the Dough:
    In a mixer or using a hand mixer, cream together the softened butter and sugar for about 2 minutes until smooth. Add the egg and vanilla extract and mix until well incorporated.
  • Form the Dough:
    Gradually add the flour and mix until a dough forms.
  • Roll the Dough:
    Roll the dough out between two pieces of parchment paper to form a 12ร—5 inch rectangle.
  • Fill and Fold:
    Spread the fig mixture evenly along the center of the dough rectangle, leaving a 1/4 to 1/2-inch border along the edges. Fold the dough over the filling, pressing the edges together gently to seal.
  • Slice and Bake:
    Cut the dough into 10 equal pieces and transfer them to a parchment-lined baking sheet. Bake for 15-20 minutes, or until golden brown.
  • Cool and Serve:
    Allow the fig bars to cool before serving.

Notes

  • These fig bars are a great snack or dessert, and they store well in an airtight container for a few days.
  • You can add nuts to the filling for extra crunch if desired.
