Description

This easy Blackberry Cobbler from The Pioneer Woman is made with just five ingredients and a simple preparation. With a juicy blackberry filling and a golden, crisp topping, itโ€™s the perfect dessert to serve with a scoop of vanilla ice cream.


Ingredients

  • 1 1/4 cups + 2 tablespoons sugar, separated
  • 1 cup self-rising flour (or homemade version, see notes)
  • 1 cup milk (whole milk is best)
  • 1/2 stick butter, melted (equal to 4 tbsp.)
  • 2 cups fresh or frozen blackberries, rinsed and patted dry
  • Vanilla ice cream, for serving

Instructions

  1. Preheat the Oven:
    Set the oven to 350ยฐF (175ยฐC).
  2. Mix the Ingredients:
    In a large bowl, combine 1 cup of sugar and flour. Stir in the milk, followed by the melted butter. Mix until well-combined.
  3. Prepare the Baking Dish:
    Grease a 9 x 9 inch baking dish and pour the batter into the dish.
  4. Add the Berries:
    Distribute the blackberries over the top of the batter. They will sink as the cobbler bakes.
  5. Top with Sugar:
    Sprinkle 1/4 cup of sugar over the top, reserving 2 tablespoons for later.
  6. Bake:
    Bake for 50 minutes. Remove from the oven and sprinkle the remaining 2 tablespoons of sugar over the top. Return to the oven and bake for an additional 10 minutes or until the top is golden brown.
  7. Serve:
    Serve immediately with a scoop of vanilla ice cream, if desired.

Notes

  • If using frozen berries, add them directly from the freezer without thawing to avoid a mushy texture.
  • If you donโ€™t have self-rising flour, you can easily make your own by combining 1 cup of all-purpose flour with 1 1/2 teaspoons of baking powder and 1/4 teaspoon of salt.
