Description

Hobo Casserole is a hearty, comforting dish layered with seasoned ground beef, tender potatoes, melty cheddar cheese, and creamy soups. Itโ€™s a simple and filling dinner perfect for busy weeknights or feeding a hungry crowd.


Ingredients

  • 1 lb lean ground beef
  • 1 small yellow onion, diced
  • 4 medium russet potatoes, peeled and sliced
  • 8 oz cheddar cheese, grated
  • 1 (10 oz) can cream of chicken soup
  • 1 (10 oz) can cream of potato soup
  • 1 tsp Worcestershire sauce
  • 1/4 cup milk
  • 1 tsp Creole seasoning
  • 1/3 cup crispy French fried onions
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350ยฐF (175ยฐC).
  2. In a skillet over medium heat, cook ground beef and diced onion until beef is browned and onion is soft. Drain excess fat. Season with salt, pepper, and Creole seasoning.
  3. In a bowl, mix together cream of chicken soup, cream of potato soup, Worcestershire sauce, and milk until smooth.
  4. In a greased 9ร—13-inch baking dish, layer half of the sliced potatoes on the bottom.
  5. Spoon half of the cooked beef mixture over the potatoes, then pour half of the soup mixture over the beef.
  6. Repeat layers with remaining potatoes, beef, and soup mixture.
  7. Cover with foil and bake for 60 minutes or until potatoes are tender.
  8. Uncover, sprinkle grated cheddar cheese evenly on top, and bake for another 10โ€“15 minutes until cheese is melted and bubbly.
  9. Top with crispy French fried onions and return to oven for 5 minutes.
  10. Let rest for 5 minutes before serving.
