- 2 large sweet white onions, chopped
- 1 tablespoon white wine vinegar
- 2 cups cottage cheese
- 1/3 cup plain Greek yogurt (or sour cream or mayo)
- 2 teaspoons beef base
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh parsley, finely chopped
- Chives for garnish
Instructions
- In a medium skillet over medium heat, melt the butter. Add the chopped onions and reduce heat to medium-low.
- Cook the onions, stirring occasionally, for 10 minutes until softened. Add salt and pepper to taste. Continue cooking for another 20-25 minutes, stirring occasionally, until the onions become deeply caramelized.
- Add the white wine vinegar and cook for another 5 minutes, then remove from heat.
- In a blender or food processor, combine the cottage cheese, Greek yogurt, beef base, Worcestershire sauce, onion powder, garlic powder, salt, and pepper. Blend on high until smooth and creamy.
- Transfer the mixture to a serving bowl and fold in the caramelized onions and fresh parsley.
- Serve immediately with a sprinkle of chives on top, or cover and refrigerate until ready to serve.
Notes
- Make it vegetarian: Use a vegetable-based bouillon or omit the beef base.
- For extra flavor, let the dip chill in the fridge for a few hours before serving.
