Description

This healthy French onion dip is packed with protein thanks to cottage cheese and Greek yogurt.   • 2 tablespoons butter (or olive oil)
  • 2 large sweet white onions, chopped
  • 1 tablespoon white wine vinegar
  • 2 cups cottage cheese
  • 1/3 cup plain Greek yogurt (or sour cream or mayo)
  • 2 teaspoons beef base
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley, finely chopped
  • Chives for garnish

Instructions

  • In a medium skillet over medium heat, melt the butter. Add the chopped onions and reduce heat to medium-low.
  • Cook the onions, stirring occasionally, for 10 minutes until softened. Add salt and pepper to taste. Continue cooking for another 20-25 minutes, stirring occasionally, until the onions become deeply caramelized.
  • Add the white wine vinegar and cook for another 5 minutes, then remove from heat.
  • In a blender or food processor, combine the cottage cheese, Greek yogurt, beef base, Worcestershire sauce, onion powder, garlic powder, salt, and pepper. Blend on high until smooth and creamy.
  • Transfer the mixture to a serving bowl and fold in the caramelized onions and fresh parsley.
  • Serve immediately with a sprinkle of chives on top, or cover and refrigerate until ready to serve.

Notes

  • Make it vegetarian: Use a vegetable-based bouillon or omit the beef base.
  • For extra flavor, let the dip chill in the fridge for a few hours before serving.
  • Storage: Store in an airtight container in the fridge for up to 4 days.
