Description

These High-Protein Egg Bagels get their golden color and fluffy texture from egg yolks. No yeast or boiling requiredโ€”just mix, shape, and bake (or air fry)! Made with Greek yogurt for extra protein, theyโ€™re a quick, healthy breakfast option.


Ingredients

  • 1 1/4 cups unbleached all-purpose flour (whole wheat or gluten-free mix, 6.25 oz)
  • 2 teaspoons baking powder (ensure itโ€™s fresh for proper rise)
  • 3/4 teaspoon kosher salt (use less if using table salt)
  • 3/4 cup non-fat Greek yogurt (Stonyfield or Fage recommended)
  • 2 large eggs, whites and yolks separated
  • Optional toppings: everything bagel seasoning, sesame seeds, brown sugar, onion flakes, garlic flakes

Instructions

  1. Preheat oven to 375ยฐF (190ยฐC). Line a baking sheet with parchment paper or a silicone baking mat. Spray parchment with oil to prevent sticking.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. Add the Greek yogurt and egg yolks, mixing with a fork until a crumbly dough forms.
  4. Lightly flour a work surface and knead the dough 15โ€“20 times until smooth and tacky (but not sticky).
  5. Divide dough into 4 equal balls. Shape each into a ยพ-inch thick rope, then connect the ends to form a bagel shape (or poke a hole in the center of a ball and stretch slightly).
  6. Brush the tops with egg whites and sprinkle with seasonings if using.
  7. Bake on the top rack for 25 minutes. Let cool for at least 15 minutes before slicing.

Air Fryer Method:

  1. Air fry at 280ยฐF (140ยฐC) for 15โ€“16 minutes, or until golden brown.
  2. Let cool for at least 15 minutes before cutting.

Notes

  • For gluten-free bagels, use Bobโ€™s Red Mill 1-to-1 Gluten-Free Flour (baking time may vary).
  • Greek yogurt should be thickโ€”if it pours out of the container when tilted, itโ€™s too thin. Chobani wonโ€™t work.
  • Toppings like sesame seeds or everything seasoning may add extra calories.
