For the Patties:

  • 1 small zucchini, grated
  • 1 large carrot, grated
  • 1.5 lbs ground chicken (dark meat)
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp dried parsley
  • 1 tsp paprika
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp avocado oil
  • 4 slices sharp cheddar cheese

For Serving:

  • 4 brioche buns, toasted
  • Thinly sliced red onion
  • Lettuce leaves
  • Sliced tomato
  • Sliced pickles
  • Burger sauce

Instructions

  • Prep the veggies: Place the grated zucchini in a cheesecloth or paper towel and squeeze out any excess water.
  • Make the patties: In a large bowl, combine zucchini, carrot, ground chicken, onion powder, garlic powder, parsley, paprika, salt, and black pepper. Mix gently to combine without overworking the meat.
  • Form patties: Divide the mixture into 4 equal portions, shaping into ¾-inch thick patties (about 5 ounces each).
  • Cook the patties: Heat a large skillet over medium heat and add avocado oil. Cook the patties for 5-6 minutes per side, or until the internal temperature reaches 165°F.
  • Melt the cheese: Turn off the heat, place a slice of cheddar cheese on each patty, and cover the pan to let the cheese melt using residual heat.
  • Assemble the burgers: Layer the toasted brioche buns with lettuce, tomato, red onion, pickles, burger sauce, and the cooked patties. Serve immediately.

Notes
