Instructions
- Prep the veggies: Place the grated zucchini in a cheesecloth or paper towel and squeeze out any excess water.
- Make the patties: In a large bowl, combine zucchini, carrot, ground chicken, onion powder, garlic powder, parsley, paprika, salt, and black pepper. Mix gently to combine without overworking the meat.
- Form patties: Divide the mixture into 4 equal portions, shaping into ¾-inch thick patties (about 5 ounces each).
- Cook the patties: Heat a large skillet over medium heat and add avocado oil. Cook the patties for 5-6 minutes per side, or until the internal temperature reaches 165°F.
- Melt the cheese: Turn off the heat, place a slice of cheddar cheese on each patty, and cover the pan to let the cheese melt using residual heat.
- Assemble the burgers: Layer the toasted brioche buns with lettuce, tomato, red onion, pickles, burger sauce, and the cooked patties. Serve immediately.
