  • 2 large ripe heirloom tomatoes, diced (~2 cups)
  • 1/2 tsp kosher salt
  • 1 tbsp extra-virgin olive oil
  • 1/2 small shallot, finely chopped
  • 1 tsp capers, drained and finely chopped
  • 1/2 tsp balsamic glaze
  • 1/2 tsp Dijon mustard (regular or whole grain)
  • 1/2 tbsp fresh basil or parsley, finely chopped (plus extra for garnish)

Instructions

  • Prepare the Tomatoes:

    • Trim, core, and finely dice the heirloom tomatoes (about 2 cups).
    • Transfer the diced tomatoes to a colander, sprinkle with ยฝ tsp salt, and let sit for 20 minutes to 1 hour to drain excess moisture.
  • Make the Marinade:

    • In a small bowl, whisk together olive oil, shallot, capers, balsamic glaze, Dijon mustard, and fresh herbs.
  • Marinate the Tomatoes:

    • Shake the colander to release any remaining moisture.
    • Add the tomatoes to the marinade and let sit for 20 minutes to absorb the flavors.
