  • 1 1/2 cups gluten-free rolled oats
  • 1 cup almond flour
  • 2/3 cup dark brown sugar
  • 1/2 cup unsalted butter, diced

For the Filling:

  • 3 cups chopped strawberries
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • Juice and zest of 1 lemon
  • 1 tablespoon arrowroot or cornstarch

Instructions

  • Preheat oven to 350ยฐF (175ยฐC) and line an 8ร—8-inch baking pan with parchment paper.
  • Prepare the crust: In a mixing bowl, combine oats, almond flour, and brown sugar. Add the diced butter and use your hands to work it into the mixture until it forms a dough-like consistency.

  • Bake: Return to the oven and bake for 25-30 minutes until the topping is golden brown and the filling is bubbly.
