Description

This healthy homemade chicken chorizo is a flavorful, high-protein alternative to traditional pork chorizo. Made with lean ground chicken and a blend of smoky spices, this chorizo is perfect for adding to tacos, breakfast burritos, or salads. With just the right amount of heat and depth of flavor, itโ€™s a great way to enjoy a high-protein breakfast or meal prep.


Ingredients

  • 1 lb (450g) ground chicken
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon tomato paste
  • Salt and pepper to taste

Instructions

  • In a large skillet, heat olive oil over medium heat.
  • Add the minced garlic and sautรฉ for 1-2 minutes until fragrant.
  • Add the ground chicken to the skillet and break it apart with a spoon. Cook until browned and fully cooked, about 6-8 minutes.
  • Stir in chili powder, paprika, cumin, oregano, cinnamon, cayenne, salt, and pepper.
  • Add the apple cider vinegar and tomato paste, mixing until the chicken is evenly coated in the spices and the paste has thickened slightly.
  • Continue cooking for an additional 3-4 minutes, allowing the flavors to meld.
  • Taste and adjust seasoning if needed, then remove from heat.
  • Serve the chicken chorizo in tacos, on a salad, or with eggs for a high-protein meal.

Notes

  • This chorizo can be stored in an airtight container in the fridge for up to 4 days.
  • It can also be frozen for up to 3 months; simply thaw and reheat when ready to use.
  • Adjust the level of cayenne pepper depending on your desired spice level.
